Tagine is another popular dish, famous for being presented in glazed earthenware, with a cone shaped lid. We allow the meat, vegetables and spices (cumin, cinnamon, ginger saffron...) to simmer slowly together, and for long periods of time.

Couscous 'Ksekso' is the most well know dish, consisting of steamed grains of wheat. It owes its origins to the Berber tribes, and every town or region has adopted this dish and made it their own.
