North African cuisine is a fusion of Berber, Mediterranean and Arabic influences.
These rich flavours and scents make the tastes ans smells some of the most recognisable ones of today.
In North Africa we consider its an honour to have guests at our table. Generosity and good hospitality remain the cornerstone of our culture. We believe the sharing food creates more of a bond between friends than any other custom...
Tagine is another popular dish, famous for being presented in glazed earthenware, with a cone shaped lid. We allow the meat, vegetables and spices (cumin, cinnamon, ginger saffron...) to simmer slowly together, and for long periods of time.
Couscous 'Ksekso' is the most well know dish, consisting of steamed grains of wheat. It owes its origins to the Berber tribes, and every town or region has adopted this dish and made it their own.
