étain, a modern French restaurant, is Conran's first destination restaurant in the UK outside of London. étain offers an intimate and elegant setting along with a sense of glamour and occasion. The menu, rooted in French tradition, offers dishes that are carefully prepared and simply presented using the very best Scottish regional produce. Example dishes are: fresh pea soup with morels and chervil; poached langoustines, herb salad and lemon mayonnaise; Culatello ham, Canteloupe melon and aged balsamic vinegar; roast halibut, fricassee of mussels, oysters, clams and fennel; and roast pigeon with Puy lentils, slow roasted garlic and glazed shallots. The menu will have a set price format of £16 for 2 courses and £18.50 for 3 at lunch and £24 for 2 courses and £28 for 3 at dinner.

Designed by Conran & Partners the interior, with seating for 70, combines gentle natural oak, warm earthy colours, luxurious leathers and comfortable fabrics to create a stylish and welcoming room. étain's entrance in Springfield Court, Queen Street with its glazed frontage and external glass lift add to the allure.
